Mexican Slaw, inspired by Pinterest

Before I get started, did you see the widget over there on the right? I am doing the Susan G Komen 3 Day Walk for the Cure in Boston in July and could use your support. Please give what you can to save the boobies. You know how much I love the boobies! Also, I’m putting together a series about boobs and would love guest posts…booby talk only!

 

If you follow me on twitter, you’ll notice I’m a HUGE pinterest addict, and wannabe foodie. Its not often I get to try new recipes but when the Dude goes down for his nap on Saturday, I’m scrambling to try ANYTHING! And below you’ll find one of my recent efforts.

To give credit where credit is due, I follow the blog How Sweet It is and follow the delightful Jessica on Pinterest as well. One of her pins lead my to Cookin’ Canuck. And Dara, I’m now haunting your blog too.

The pics below are my attempt to recreate Dara’s Mexican Slaw. You’ll have to go to her blog to get the recipe. Heh.

Lime and Cilantro, an excellent start

You should see the cilantro I have growing in my vegetable bed. IT.IS.INSANE. Next I need to get a lime tree in the ground, ASAP.

The dressing, light with a bite.

This deliciousness? Cumin, cilantro honey, salt, lime juice, olive oil and some jalapeno for an unexpected kick. YUM.

LOTS of cabbage.

Cabbage…. um yeah. a LOT of cabbage.

Avocados may be their own food group.

My second favorite food in the whole world: AVOCADOS baby! Now where would I plant an avocado tree? Hmmm.

Mangos may be the death of me.

Oh, and that stuff on top: Mango! We have a love hate relationship.

I may have eaten the entire bowl myself. Good thing we have a guestroom. Sorry, Adonis.

For Maddy’s 4th, we had a party where I made Slow Cooker Carnitas Taco. I used this slaw as the additional filling. It was perfect!

I’m also clearly NOT a photog! These were all taken with my iPhone. Anyone have a camera/photo editing app they like?

    OMG. I may have to make that and bury my face in it.
    Think I could leave out the mango or would that make it weird?
    I use Camera+ on my iPhone and love it so much.

    Yum. I have cilantro growing right now too but I can’t plant lime trees here because it’s too cold.

    I took a pic yesterday that accidentally had some of my boobies in it and I thought of you.

    Truly looks delicious — I actually have a bunch of avocado at home, and was planning on weekend guacamole, but I might need to find some mango & cabbage for a side-trip.

    But, what’s up with the love/hate relationship with mango?

    WOW this does look absolutely delicious. I also happen to have both avacado and cabbage right now. Mango…I’ll have to grab some (love hate with me as well). Can I also say that I am jealous of your herb garden talk?

    I am so glad I stumbled upon this post. I am planning a b-day party for my husband’s 60th next week and this slaw will go great with the tacos I had planned. Thanks for the links.

    This looks so yummy! I love the color – or what I imagine the color ends up being. :)
